The meal that allows you to use your leftovers, home ingredients AND saves you money: Fried Rice! You can use anything that is potentially going bad if you don’t use it the same day or any other ingredients you find in your fridge.
For her fried rice, Amy uses cilantro that “has seen better days,” leftover bacon, eggs and garlic. She butters the pan first, but you can use any other cooking oil as well. She adds in onions, carrots, mushrooms—add in anything else you’d like—and sautés them. After that, she adds the garlic, and then the rice so it starts to get nice and crispy.
After the rice, she adds the bacon, and then pushes everything to the side with her cooking utensil to make a “hot tub” for the eggs. After that, you can toss everything together and drizzle coconut aminos, soy sauce or whatever sauce you like on your fried rice. Yes, it’s THAT easy!
